All logistics are very easy to handle and also the collaboration with the authorities. Everything is available very near and arranging transport of caviar is easy. The whole municipality has supported this new enterprise and there has been practically no objections, as generally would be in cases where new large fish farms would be built.

There are also several advantages of being situated on premises of a large factory. However, the farm is an independent unit and is not depending of the factory directly. For example waste energy is currently available for free, the factory waste treatment plant takes care of the fish farm wastes, and in the factory area there is a strict control for persons moving in and out.

The Product

Caviar is a luxury product, and the main markets are mainly abroad. A small retail store in Varkaus (Sepon lihatori) sells the locally produced caviar with special price; 30 g costs 55 euros, 50 g 85 euros, that is 1700-1800 euros per kg (in February 2013). At the Helsinki airport the 30 g tin had a price tag of 89 euros. In my opinion this caviar tastes just wonderful and it melts really nicely in your mouth leaving a great aftertaste in your taste buds. I really enjoyed it. However, whether or not that culinary experience is worth such money is up to you to decide.
